Hello Kitty and My Melody

Hi everyone
The following photos are of the Hello Kitty and My Melody cupcakes that I made for a friend and her daughter who are both such huge fans. I had researched for hours to find a good photo of Melody, which wasn't easy. However I kind of changed her up a bit and she looks cute!! I know that the pink is not the right shade, but at the time I was doing them it seemed ok. Afterwards I realized that it was much to light for My Melody : (
 I have to say, that I enjoy covering cupcakes with fondant, its a lot of fun! ( especially once you get the hang of it! )
Ok, I have to keep this really short and sweet. I'm baking right now and testing out a new recipe for a tea party tomorrow!!!

Elina's 65th Birthday

Hi Everyone
Hope you all had a good Christmas! I've been busy baking, eating, sleeping and lots of shopping : ) ( not necessarily in that order!)
My friends south of the border actually got a white Christmas, I think they got a little too much! Here we didn't get any snow at all. Some of you might have been disappointed, but I was kind of happy because I didn't want to shovel : (
The following cake was done for my friend Geovanna's mom, who celebrated her 65th birthday. I was given freedom to choose colours and thought that the pink/white and a hint of green just look so pretty together. To tie it together, I added the black/white ribbon!


This was my first attempt at making a rose using the cut outs. I wasn't happy with the centre part, but otherwise not bad for my first time. Normally I make roses one petal at a time using my fingers to shape the petals and then attach them.. I'm working on doing a tutorial and will let you all know when that is going up: )
Anyhow, I've got to get going but will be here tomorrow to post some photos of the Hello Kitty / Miss Melody cupcakes!  They turned out so cute!!

Look what I got!

So I've been waiting a long time for this to come, but for some reason the Shopping Channel had screwed up my order and it was returned back to them. I also didn't get the colour I wanted. I originally had asked for a gunmetal colour but they only had white and black in stock. Of course had to go with the black one: )  So presenting my new baby.....the Kitchen Aid Professional 600 series......wooohooo!!!

 I had to try out my new mixer and let me tell you.....it was pure bliss and the clean up afterwards was a cinch. I will post those cookies and the recipe next. Amazing how easy life can get once you own one of these babies. Take care!

Christmas Oreo Pops

I guess everyone already knows Bakerella! If you haven't then go to http://www.bakerella.com/ for some really cool ideas!
Well the following idea came from her blog and I decided to make them for Christmas. What better way to enjoy white chocolate with double stuffed oreos!! Yummy!
First of all start with double stuffed oreos, otherwise this will not work. Next slowly insert lollipop sticks into the cookie. You may notice that the top cookie may come apart or break. Not to worry just slowly push it back together and press it firmly into place.


 Once all cookies are done, you can either place them in the refrigerator or the freezer. Which I ended up putting them into the freezer to hurry the process. Now the fun part, melt your white chocolate on a double boiler. You can use any pot with a glass bowl that fits on top. Make sure that the bowl does not touch the water and then melt your chocolate on low heat. Dip your cookies into the chocolate and place them on a foam board to let them dry. Decorate as you please : )

Christmas Cupcakes

I made cupcakes for  "Diwali" ( which is the festival of lights) and I was just downloading the photos and realized that I used Christmas colours. So I thought that these would make a great christmas gift. These were a white sour cream cupcake with a vanilla buttercream. Which I then covered with fondant,  I had just bought a set of imprint mats from Golda's and they were so easy to use. I will show you guys in another write up how these work!
I plan on making cupcakes this year to give to my friends and family. This was the first time that my mom had helped me make cupcakes so these are extra special to me. Hope you guys like it : )

Hi Everyone


Well the title says it " I Bake Cakes" . I love to bake and I enjoy learning how to make something from sugar and flour! How simple is that?

This blog is for me to share with everyone what I love to do. I work full time and when I get home, its all about the baking. I'm not much of a writer but this format will give me a chance to connect with fellow bakers or just anyone who wants to read my blog on baking. I'll document all my good stuff and of course my flops!!! This is the only way I'm going to learn and be able to perfect a recipe. I want to share what I've learnt from my fellow bakers or books that I've purchased. ( I have a lot!!). Of course we can't forget YouTube!! I've seen so many videos on cake decorating that I think we all can agree that it has a wealth of information for any newbie or professional! Last but not least the TV shows that have inspired many of us!!!
I remember an episode from Cake Boss, where Buddy says that "he's in the zone" when he's decorating a wedding cake. That's what happens to me, I've been told by my mom that my face changes ( not sure how it looks like, but don't care!! lol! ) as I design my cakes. There is something so satisfying when you make your first rose, or your fondant has no air bubbles and looks smooth!!lol!
Baking for me is very therapeutic, its such a stress reliever especially when you've had a hard day at work or at home. There is something so satisfying and rewarding when I see something that comes to life, just from sugar and flour : ) How sweet is that?

So tell your friends and please join me on my adventure on making desserts without eggs or animal products!


P.S.- Just a side note in regards to using milk/ cheese products in my baking. I'm a vegetarian who does not eat any meat, poultry, fish, eggs, etc. However I do have milk/cheese products ( without the rennet) The purpose of this blog is so that everyone understands that I don't use products that hurt any animals. My baking consists of both vegan and lacto-vegan. I also use soy products that are readily available at our supermarkets.
